Hakko Department is a fermentation specialty store based in Tokyo’s Shimokitazawa district. Founded in April 2020 by fermentation designer Hiraku Ogura, the store champions the rich tradition and modern evolution of fermentation in Japanese cuisine and lifestyle. Operating under their motto “Let all the world’s fermentation gather!”, Hakko Department curates an extensive array of fermentation products from across Japan and around the globe. Customers can explore a diverse range of products, from traditional staples like miso, soy sauce, and vinegar to innovative items such as black koji amazake, outdoor natto, and unique beverages. You can also enjoy sake tastings from all over Japan at the shop.

The shop also features an on-site cafe where you can enjoy carefully curated fermented lunches and drinks. Seasonal dishes are crafted using fermentation techniques from across Japan, offering a balanced fermented food lifestyle that incorporates seven representative types of fermentation bacteria, including koji, lactic acid bacteria, acetic acid bacteria, and natto bacteria. Menus are available in English, Chinese, and Korean.

The establishment also hosts educational events, workshops, and interactive experiences. They regularly host interactive workshops and seminars where participants can learn traditional fermentation techniques while enjoying live demonstrations and tasting sessions that highlight the culinary and health benefits of fermentation.

Hakko Department opened its second store, Hakko Department Yamanashi, in April 2024.
Opening hours: 10:00am–1:30pm / 14:30pm–17:30pm (Mon to Sat, and the first Sunday of each month)
Closed on Sundays and public holidays (open during Golden Week)
